Introduction

This is one of the many fabulous recipes from www.foodsofapril.com. These are HUGE brownies, four servings for the whole recipe! Ingredients

    2 scoops protein powder (I used Isoflex chocolate flavor)

    1/2 cup carob or cocoa powder

    1/4 cup oat fiber (you can put .25c oatmeal in the blender if you don't have this)

    3/4 cup wheat bran

    1 cup pumpkin

    3/4 cup egg beater / egg whites

    1/2 cup - 1 cup zucchini shreds

    Stevia or other non calorie sweetener to taste (i used 1/3 cup xylitol)

    pinch of baking soda, baking powder, and salt





Directions

* Preheat oven to 350. Spray an 8 x 8 pan with nonstick baking spray.
* Mix all ingredients. Pour into pan.
* Bake for about 45 minutes, or until a knife inserted comes out clean.

    I substituted carrot for half the zucchini. I made 12 smaller brownies as they make four very big brownies! A great way to use my protein powder. - 8/28/14
