    1/2 c. all-purpose flour
    3/4 tsp. baking powder
    1/4 tsp. salt
    2 tsp. granulated sugar
    1 egg
    1/4 c. water or milk
    1 tbsp. cooking oil
    1 c. fresh or canned, whole kernel corn


Combine dry ingredients and mix well. Combine remaining ingredients and blend into dry ingredients without overmixing. Drop by 1/4 cupfuls into preheated 375 degree F. vegetable shortening. Fry until golden brown, turning once. Place on paper lined baking sheet in warm oven until all are cooked. Serve with maple syrup. Yield: about 6 (4 inch) fritters.

  • Super Easy. Left sugar out and used whole wheat flour and rice bran oil and they were a big hit with the picky man of mine :) will add some cilantro, peppers, and black beans next time with a sour cream and lime dip. Feel inspired :) - 2/18/15

  • These were super easy to make, everyone in the house loved them. I will make them again, and maybe add some cheese or make them more savory to translate to other meals. - 8/16/10
