Introduction
Serve over whole wheat pasta. Serve over whole wheat pasta.Number of Servings: 6
Ingredients

4 chicken , boneless and skinnless
1 (sm) jar of sun dried tomatoes in olive oil
3 carrots diced fine
1 med onion diced fine
1 lb of fresh asparagus, cut into bit size pieces
2 T fennel seed
4 Garlic Cloves sliced thin or minced
1 pkg of whole wheat pasta
Directions
Boil a pan of water to cook pasta while making the chicken.
Cut chix into 2" pieces and brown in skillet, using non stick spray. Remove from pan and put into a bowl.
Add onion and garlic with 1T of the oil from the tomatoes. Cook til tender.
Add carrots, fennel and tomatoes. Cook til carrots are tender.
Add asparagus. Cook til tender crisp and add chicken to warm.
Serve over pasta and top with shredded parmesan cheese.
HINT: If the veggies look dry add some of the pasta water. Will add flavor without adding fat.
