Introduction

Ingredients

    1 can Rotel (tomatoes with green chilis)
    1 can Healthy Choice Cream of Mushroom Soup
    1 cup of diced onion
    2 cups of cooked, diced chicken
    2 cups of Reduced Fat Cheddar Cheese
    8 Flour tortillas, cut into 1/8's

Directions

Mix the Rotel, soup, chicken, onion together. In the bottom of a medium sized casserole dish put a scoop or two of the chicken mixture to lightly cover the bottom of the dish. Put a layer of tortilla 1/8's, then a layer of cheese. Continue to alternate soup mixture, tortillas and cheese. Try to reserve some of the soup mixture to put on top of the last layer of tortillas and top with cheese. There are usually about three layers of tortillas.
Bake at 350 for 40 minutes or so until the edges are bubbly.
