Number of Servings: 1


    Beets, fresh, 1.5 cup, chopped
    Onions, raw, 1.5 cup, chopped
    Chicken Broth, sugar free, low sodium, 1 cup
    Red Potato, 10 oz, diced
    Sea Salt, 2 tsp
    Celery seed, .5 tsp
    Yogurt, condiment, 2 tbsp
    Garlic Powder, 1 tsp.


Place chicken broth in a medium size sauce pan and place on medium high heat. Add beets, onions and potatoes. Turn up heat to high and bring to a boil. Cook until all are tender. Turn off heat and add in sea salt and celery seed and stir.

Place all ingredients including the broth into a blender and blend until creamy. Pour back into sauce pan and stir in yogurt and garlic powder.

Adjust seasonings seasonings if needed.

Serves: 1

Tip #1: You can serve this with turkey and cranberry or chicken and diced pineapple.

Tip #2: If you desire a creamier soup, you can use low fat sour cream instead of yogurt or dashes of organic real cream.

    Seems like a nice recipe. But with chicken broth, it doesn't qualify for the "vegetarian" tag :) - 8/7/10

    Very Good
    Calorie count provided seems high. Would be good with an apple chopped & blended with the mix! - 9/30/07
