Introduction
Delicious version of Greek salad! Delicious version of Greek salad!Number of Servings: 6
Ingredients

1 can of chickpeas (drained & rinsed)
1 cucumber
16 cherry tomatoes
1 yellow pepper
1 small yellow onion
1/2 cup feta cheese
3 tbsp olive oil
2 tsp each basil & oregano
salt and pepper to taste
Directions
Drain and rinse chickpeas, add to bowl
Chop cucumber in half lengthwise, and then chop into medium size pieces
Cut cherry tomatoes in half, lengthwise
Chop yellow pepper into 1" pieces
Chop onion in half, then slice into long thin strips
Toss all ingredients in the bowl with feta cheese, basil, oregano, salt & pepper and olive oil.
Enjoy!
(Note: you may want to add lemon if you like)
