Introduction

Ingredients

3 T flour
1/4 t baking powder
Dash salt
2 egg whites
3 T sugar
3 T non-fat milk
2 egg yolks - well beaten
1 T lemon juice
1 large apple - thin sliced
1/4 C sugar
1/4 t cinnamon
1 t salted butter
Directions
1. Preheat oven to 375 degrees. Sift flour with baking powder and salt.
2. With electric mixer, beat egg whites until foamy, gradually beat in 3T sugar, beat until stiff peaks form.
3. Into flour mixture, beat milk and egg yolks until smooth; with rubber scraper or whisk, with an under and over motion, gently fold into egg whites along with lemon juice until well combined.
4. Slowly heat 10 inch buttered skillet. Turn batter into skillet, spreading evenly.
5. Arrange apple slices in pattern over the top and sprinkle with 1/4 c sugar mixed with 1/4 t cinnamon.
Bake 10 minutes or until top is glazed. Serve warm cut into wedges.
