Ingredients

1 Pita, Whole Wheat, 4"
1 Egg, Medium
2 Egg Whites
1/4th Tsp of Pepper
1/4th Cup of 2% Mozzarella Cheese
1 medium slice of bacon, raw
1/4th cup of Tomatoes, chopped finely
1 tbsp of chopped Shallots
Directions
Preheat oven to 350 Degrees.
Spray cooking pan with no-stick spray and place pita on top.
In a skillet, over medium heat, cook bacon to your liking.
When completed, add shallots and tomatoes to the pan until the begin to sizzle. Set aside.
Chop bacon into small pieces, mix with tomato and shallot mixture.
In a separate bowl, whisk together egg, egg whites, and pepper.
Pour tomato, shallot, and bacon into egg mixture, mixing evenly.
Pour on top of pita, making sure not to go over.
Sprinkle mozzarella cheese on top.
Bake for 15 minutes or until cheese is browning.
