Ingredients

    Goat Cheese, Soft, 1 oz (2 TBSP)
    *Pork, fresh, loin, tenderloin, separable lean only, raw, 18 oz
    Cranberries, dried, sweetened (craisins), 0.125 cup (2 TBSP)
    Walnuts, 0.125 cup, chopped (2 TBSP)
    Bread crumbs, dry, grated, seasoned, 0.25 cup
    egg white, fresh, 2 large
    *Green Onion (1 Green Onion), 0.33 cup , chopped
    *Spice, Rosemary (dried), 2 tbsp
    *Spice, Thyme (dried), 1 tbsp
    Olive Oil, 2 1tsp
    Salt, pepper to taste

Directions

Preheat oven to Broil on HIGH. Take the pork tenderloin, butterfly it (cut in half but not all the way through) and pound it out to make it flatter. Mix together goat cheese, cranberries, green onion, walnuts, bread crumbs and egg whites----lay it out down the center of the tenderloin. Roll it up then tie with butcher twine. Rub the outside with a bit of olive oil and season (dried rosemary, thyme s&p). Cook on a broiling rack for 25-30 minutes, turning to brown on each side. Great dish for the BBQ, just need to brown all sides and generally its done! Great served with applesauce on the side.
