Ingredients

    6 eggs
    Small Egg Substitute Container
    Salt and Pepper to taste
    8oz. Reduced Fat Cheddar or Colby Cheese (Shredded)
    2 red peppers, chopped
    1 bunch scallions, chopped
    10 oz pkg frozen, chopped spinach (thawed, rinsed and completely drained)
    1 pkg Hormel Peppered Bacon Pieces (optional)

Directions

Whisk eggs, egg substitute, salt and pepper together. Add the remain ingredients and combine. Bake in a 9x13 pan, greased with cooking spray and bake at 350F for 45-50 min. Cut into 12 squares. Each square is 1 serving.
