Introduction

The Chicken in this Omelet was actually an after-thought and was only added to boost the Flavor, Texture and Protein.

As written, there is a little under 1,000mg of sodium in this recipe. Back off on the flavored salts, if desired, but the Bacon Salt gives the finished product a FANTASTIC overall taste result.

This Omelet is large enough to serve 1 hungry person or 2 people with a small side-salad (or other side-dish) for ANY meal.

Ingredients

    * Egg, fresh, 1 large
    * Egg white, 2 serving
    * Broccoli, .25 cup
    * Cauliflower, raw, .15 cup (optional)
    * Mushrooms, fresh, .5 cup, pieces or slices
    * Cherry Tomatoes, Fresh, 3 Tomato, sliced in halves
    * Frozen Pepper & Onion mix, .5 cup
    * Tyson's Fajita Chicken Strips, 2 oz
    * Kraft 2% Deli-Deluxe Swiss Cheese Slices, .5 serving
    * Bacon Salt, 0.25 tsp
    * Garlic Salt, .25 tsp
    * Pepper, Black, Coarse Cracked.25 tbsp
    * Unsalted Whipped Butter, 1 tbsp

Directions

* Saute Broccoli, Cauliflower, Mushrooms, Onions & Peppers in 1 Tbsp Butter. Add Bacon Salt and Garlic Salt.
* Cut chicken into cubes and add to vegetables. Set aside.
* Beat 1 Egg and 2 Egg whites together with a couple of dashes of bacon salt and 1/4 tsp Fresh Cracked Black Pepper.
* Heat Skillet or Omelet Pan to Med and Spray with Non-Stick Cooking Spray.
* Pour Egg Mixture onto Hot Skillet and Spread to desired size
* When Egg Mixture is beginning to set, but still "Runny" on top (about 2 minutes), Place Swiss Cheese in center and on top of cooking egg
* Randomly Place Cherry Tomatoes over Swiss Cheese
* Pour Chicken & Vegetable Mixture into center third of omelet.
* Carefully fold sides of Omelet over the center "Stuffing"
* Allow to cook in this position for about 2 - 3 minutes
* VERY Carefully flip Omelet over and continue to cook another 2 - 3 minutes
* Turn out onto Plate
