Ingredients

    1 Pork Shoulder roast, 12 oz
    3 cups of diced carrots
    1 cup of diced raw onions
    4 cups of white or red potatoes
    1 whole zucchini, chopped
    1 medium sweet potato

    Cut up the potatoes, onions, sweet potatoes, carrots, and zucchini and place them at the bottom of the slow cooker. Add the pork roast on top and add a 1/2 cup of water to the mix. Put the slow cooker on the low setting for 6 hours.

    Option to thicken into stew: at the end of the 6 hour cooking time, take out the meat and put it onto a plate. Mix a tablespoon of flour with a small glass of water and then pour into the veggies and broth. Mix all together. Add the slow cooker top back on and turn on high for 5 - 10 minutes. Ready to serve.
