Ingredients

1 Link of Spicy Chicken sausage cut up
1/4 cup of diced onion
12 cup of diced bell pepper
1 Clove of garlic
1 small zucchini
Pinch of Cayenne Pepper
Black Pepper
4 eggs
1/2 cup of flour
1/4 tsp. baking powder
1/4 tsp. salt
1 1/3 cup of milk
1/5 cup of fat free cheddar cheese
Parsley (optional)
Directions
Preheat oven to 400F.
Lightly grease a 10-inch pie pan.
Take the onion and garlic and process in a mini food processor or dice by hand.
In a medium frying pan lightly spray with canola oil or use butter, cook chicken sausage, onion, garlic, pepper, and zucchini until vegetables are translucent. Sprinkle with a pinch of Cayenne Pepper and Black Pepper. Set aside to cool for a few minutes.
In a large mixing bowl, whisk together eggs, flour, baking powder and salt. Whisk in milk, then vegetable mixture.
Pour quiche base into prepared pan. Top with cheddar cheese. (optional) Sprinkle with parsley for color.
Bake for 25 minutes, or until center is set and the outside edge is golden brown.
Let set for 5 minutes, then slice and serve.
