Ingredients

1/2 lb Rotini Pasta
2 Tbsp Olive oil
1 lb Boneless Skinless Chicken Breast cut into small strips
1/2 tsp salt
1/4 tsp ground pepper
3 cloves of garlic thinly sliced
1 tsp Oregeno
1 7oz jar of Roasted Red Peppers thinly sliced
1 14 oz can of Artichoked Hearts Drained and Quartered
1 Pint Cherry Tomatoes sliced in half
2 Tblsp Lemon Juice
2 oz Feta Cheese crumbles
2 Tbsp Parmesan Cheese Grated
Directions
4 servings- Yeild 7 Cups
Bring large pot of salted water to boil. Add PAsta and cook according to package directions. Drain
Heat 1 Tbsp oil in large pan over medium heat. Sprinkle chicken with salt and pepper and fry in oil until browned and cooked through about 6-7 minutes.
Remove chicken and add remaining 1 Tbsp of oil. Add garlic and Oregeno and cook 30 seconds. Add Tomatoes, peppers and artichokes cooking about 3 minutes until tomatoes soften. Add lemon juice and return chicken to pan. Cook 1-3 minutes longer, Transfer pasta to a large bowl pour chicken mixture over and toss lightly. Sprinkle with cheeses and serve!
