Ingredients

    Rice:
    - 2 cups (raw) Sushi rice, freshly cooked (Recommended brand: Kokuho Rose). Makes approx. 6 cups cooked.
    - Furikake nori

    Mixture:
    - 1 pkg imitation crab (Surimi) chopped finely
    - 5 pieces shiitake, soaked and seasoned for sushi, cooked and chopped
    - 1 cup mayonnaise
    - 1 cup sour cream
    - about 4 tbsp Tobiko (flying fish roe)
    - green onions, chopped - About half a bunch

    Get about 10 Packs Korean Nori (Each Pack contains 12 small sheets used to roll the rice mixture).

    This recipe assumes the use of 12 sheets per serving (1 Nori Pack).

    (Recommended Brand "Shirakiku" in the yellow 3-pack)

For the shiitake mushrooms, Buy a package of them dried. Soak them in warm water for about 20 min, and put something on top to keep them in the water. Then simmer them in a sauce pan for 30 min with enough water to just cover the mushrooms and a mixture of 1 part soy sauce to 2 parts sugar (until the water is like a light coffee - about 3 tbsp of soy sauce). Drain and dice the Mushrooms.

Combine All mixture ingredients and mix well.

In a 9" X 13" pan, layer rice. Sprinkle with furikake nori. Then spread mixture on top of rice. Broil in oven until lightly browned.

To serve, spoon onto Korean nori in "mini temaki" fashion. Roll and enjoy!
