Introduction

A delicious and healthy alternative to the same old sandwich...and it's vegetarian friendly! A delicious and healthy alternative to the same old sandwich...and it's vegetarian friendly!
Number of Servings: 4

Ingredients

    1 ripe roma tomato
    4 whole grain tortilla wraps
    1 cup crumbled feta cheese
    1/2 cup roasted garlic hummus, or your preferred flavor
    2 cups fresh baby spinach
    pepper to taste if desired

Directions

Heat the wraps in the oven on low heat, 250 degrees, for about 5 minutes or until warm (or if you're on the go, heat them up in the microwave for about 20-30 seconds each). While the wraps are warming up, rinse the spinach and let dry on a paper towel. Then dice the tomato.

When the wraps are warm, remove from the oven and dress each in the following layers:

spread 2 tablespoons of hummus evenly
1/4 of the diced tomato
1/2 cup of spinach
1/4 cup of feta
sprinkle with freshly ground pepper if desired

Next, wrap the tortilla to your liking, and enjoy! These are great with a side of fresh carrots and fruit. It's a fabulous and light lunch, but also satisfying...even for my husband. :-)
