Ingredients


    Bestlife buttery spread (w/olive oil), 1 tbsp
    Olive Oil, 1 tbsp
    Yves Veggie Cuisine Veggie Chorizo (57g = 1/3 link = 1 serving), 342 grams (the whole 12 oz package)
    Onions, raw, 1 large, chopped
    Celery, raw, 2 cup, chopped
    Apples, fresh, 2 medium, chopped
    Libbey's canned pumpkin, 3.5 cups (one 15-16 oz can)
    Vegetable stock, home prepared - no fat or sodium, 4 cup (32 fl oz)
    McCormick GrillMates Montreal Steak Seasoning, 1 tsp
    Cinnamon, ground, 2 tsp
    Stonemill Essentials Seasoned Salt, 1 tsp
    Nutmeg, ground, .5 tsp
    Low fat cream cheese, .25 cup

Directions

Melt the oils in a large stockpot.
Add the chorizo, onion, and celery.
Saute till onions begin to caramelize.
Add the apples, pumpkin, and stock.
Add the seasonings and adjust according to your preference.
Simmer 20-30 minutes.
Adjust seasonings if necessary.
Add cream cheese and serve.

makes 9 - 1 cup servings
(and I like mine with a little cheddar sprinkled on top)
