Ingredients
-
1 lb lean ground beef
8 oz mushrooms
1 can 16 oz beef broth
6 medium potatoes
¼ to ½ cup Chicken broth
4 Garlic cloves
1 Tbsp Corn starch
Salt
Pepper
Directions
Peel potatoes and cut into quarters. Place in sauce pan and cover with water. If desired, add 4 peeled whole cloves of garlic. Bring water to a boil, and cover. Simmer potatoes for about 15 minutes, or until tender.
While potatoes are simmering, wash and slice the mushrooms and place in a small saucepan. Reserve ¼ cup of the beef broth. Pour the remaining broth over mushrooms and bring to a simmer, and gently cook for about 10 to 15 minutes, until mushrooms are tender.
Divide 1 lb ground beef into 6 patties, approximately ½ inch thick. Spray broiler pan with nonstick spray. Place patties under broiler, about 6 inches below heating element. Broil for approximately 6 minutes on each side, until cooked through and lightly browned.
Drain water from potatoes, and add salt and pepper to taste. Pour in ¼ to ½ cup chicken broth as you mash the potatoes.
Add one Tbsp of cornstarch to reserved beef broth and stir til completely combined. Add slowly to simmering mushroom sauce, stirring constantly. Continue to simmer until sauce regains it dark brown color and is clear. Add pepper to taste.
(For frozen dinners place one patty in each of 6 containers. Divide mashed potatoes between your containers, making a slight indent. Pour mushroom gravy over hamburger patty and potatoes. Add frozen veggies. To serve microwave for about 6 minutes.)
