Ingredients

    For the hash
    1 tablespoon olive oil
    1 cup finely chopped onion
    1 cup finely chopped green pepper
    2 large jalapeņo, seeded & chopped
    Kosher salt, to taste
    Red pepper flakes
    1/2 tsp cumin
    4 cups peeled, sweet potatoes, 1-inch cubed
    2 tablespoons ketchup
    1/4 cup Worcestershire sauce
    4 ounces turkey sausage, diced
    4 teaspoons chopped cilantro

    For serving
    Scallions, chopped
    Hot sauce
    Ketchup

Sweet 'n' Spicy Breakfast Hash With Tofu Turkey Sausage
Serves 4

For the hash
1 tablespoon olive oil
1 cup finely chopped onion
1 cup finely chopped green pepper
2 large jalapeņo, seeded & chopped
Kosher salt, to taste
Red pepper flakes
1/2 tsp cumin
4 cups peeled, sweet potatoes, 1-inch cubed
2 tablespoons ketchup
1/4 cup Worcestershire sauce
4 ounces turkey sausage, diced
4 teaspoons chopped cilantro

For serving
Scallions, chopped
Hot sauce
Ketchup

1. Bring 1 cup of water to a boil and steam the sweet potaoes for no more than 5 minutes. Make sure the water does not touch the potatoes; it makes for a mushy appearance when served.
2. In a nonstick skillet, heat the oil over medium-high heat. Add the onions green pepper, jalapeņo and sausage. Cook until golden, about 5 minutes.
3. Add the cubed potatoes, ketchup and Worcestershire sauce, and season with salt, red pepper flakes and cumin. Press the mixture down into the skillet, reduce the heat to medium, cover and cook until golden, about 7 to 10 minutes.

3. Place the hash on a plate and top with cilantro. Serve with scallions, hot sauce and ketchup, if desired.
