Introduction

This creamy stew is quick and easy. I made it on the spur of the moment and was pretty happy with the results. Makes great leftovers for lunches, as well! This creamy stew is quick and easy. Ingredients

    2 Tbsp Olive Oil
    1/2 Large Red Onion, chopped
    1 Tbsp Cumin Seeds
    2 Tbsp Chili Powder
    Salt and Pepper
    3 Cloves Garlic
    1 can Petite Diced Tomatoes w/ Sweet Onions
    1 can Red Kidney Beans
    1 can White Kidney Beans (Cannelloni)
    1 Lb Chicken Breasts, cut into bite size
    1 Green Pepper, chopped
    1/4 Cup of Tahini
    1/4 Sour Cream

Directions

1. Saute chopped onion, in olive oil for about 5 minutes. Add cumin seeds, stirring to make sure they do not burn. Add garlic, chili powder and salt and pepper to taste, when you smell the cumin has toasted. Continue to stir for a minute or so.
2. Add canned tomatoes, tahini, and beans, cook for 5-10 minutes.
3. Taste & adjust seasonings. Add green pepper and cut chicken. Simmer for 15-20 more minutes or until chicken is done(the smaller the pieces the faster this will happen).
4. Right before serving add sour cream and mix in quickly. Lower temp to very light simmer and cook about 5 more minutes stirring until all flavors are mingled.

Makes about 9- 1 cup servings
