Ingredients

    1 Pound 95% Lean Ground beef
    4 cloves Garlic Chopped
    2 Small Yellow Onions Chopped
    2 Stalks of Celery Sliced Thin
    1 16 OZ Can Mexican Style Stewed Tomatoes
    1/2 Tsp. Salt
    1/4 Tsp. Pepper
    1 Tsp. Smoked Paprika
    1 Tsp. Garlic Powder
    2 Tbls. Chili Powder
    1 Tbls. Cumin
    1 Tsp. Oregano
    1 Pinch Cayenne Pepper
    1 Pinch Red Pepper Flakes
    1 Tbls. Ancho Pepper Ground
    2 Cups Beef Broth
    1/2 Lemon
    4 Packets Stevia Natural Sweetener (Optional)

Directions

Brown Ground Beef without oil, rinse in steamin hot water and and set asside. Saute garlic and onions without oil until soft. Retrun rinsed beef to pan and squeeze juice of 1/2 lemon over mixture. Add all ingredients to pan. Bring to a slow boil. Reduce heat and simmer uncovered for 30 minutes to reduce broth. Divide into 8 equal servings, approx. 2/3 cup each. Serve or refrigerate.

    not sure how this is phase one when we are only posed to have one vegetable at a time...this has tomatoes and celery in it - 4/26/12

    WOW! This was amazing! Thank you for new "go-to" recipe. Used 100g of ground beef, divided the rest of the ingredients by 6 to make one serving. Glad I did or I might have eaten more of it than suppose to. Couldn't find ancho pepper at my store so skipped. Omitted celery so can have fruit later. - 6/2/12

    You are allowed to combine the celery and tomatos if you plan on counting your tomato as a fruit (which technically it is) so this is legit phase 2 stuff. I just took out my 99% lean ground turkey and going to try this out. I am excited :) - 5/7/12

    This is DELISH!!! I put mine in freezer bags already divided into portions and put them in the freezer for an easy lunch!
