Ingredients

    Sheperds Pie
    Serves:8
    Carbohydrates Per Serving: 3 g.
    Preparation Time: 30 minutes
    Difficulty: Easy

    Ingredients:
    1 lb ground beef
    1/2 onion, chopped
    1 10 oz pkg frozen cauliflower
    2 oz cream cheese
    1/4 plus 2 tbsp heavy cream
    4 oz cheddar cheese, shredded
    salt and pepper to taste

Directions

In frying pan, cook ground beef and onion until meat is no longer pink, and onion is soft. Drain beef and distribute in bottom of pie dish (no need to grease pan). Drizzle 1/4 cup of cream over hamburger. Salt and pepper lightly, if desired.

While meat is cooking, cook cauliflower per package directions, but cook until very soft. Drain cauliflower. Add cream cheese and 2 tbsp heavy cream. Beat with mixer until very smooth (mashed potato texture). Add salt and pepper if desired.
Spread cauliflower mixture over ground beef. Sprinkle with cheddar
cheese. Bake in a 350 degree oven until cheese is melted and bubbly
(about 15 minutes).

    Very easy to make and very yummy. For those saying to lower the fat, on a true low carb diet you NEED fat. As thats what your body is getting your energy from since you are taking in minimal carbs. - 4/5/13

    Very tasty indeed. Even my highly-skeptical bf couldn't tell it was fake mashed potato! I agree, 1/8 of the recipe is a pretty serving so next time, I'll cut out some of the cream and cheese to reduce the calories, and cut a bigger slice (1/6th) per person. Really yummy dish! - 3/29/09

    This is great for low carb dieters, at who it's aimed, but since I make my Shepherd's Pie with just mashing the potatoes and putting on the top (no butter, cream or anything like that) for me, mine is actually a lower calorie, lower-fat version. This will be good for the rest of the family though - 9/5/07

    Fabulous!! I was skeptical about getting "creamy" cauliflower, but it was creamy and delicious!! Will definitely make this again, and can also just make the "mashed potatoes" as a side dish!! Great low carb dish! - 7/20/13
