Introduction

Delicious chicken & rice with Mexican flare. Delicious chicken & rice with Mexican flare.

Ingredients

    1 Box Goya Mexican Rice, prepared
    3 boneless, skinless chicken breasts, cubed
    1 jar picante sauce
    1 cup shredded mexican cheese
    Cumin, to taste
    Corriander, to taste
    Salt & Pepper, to taste

Directions

Preheat oven to 350 degrees. Spread the prepared rice in a 9X13 baking pan. Saute' chicken in extra virgin olive oil. When done, add 1/2 jar picante sauce. Heat through and spread over rice in pan. Pour on the remaining picante sauce. Sprinkle the shredded cheese over the top and bake for 30 minutes,
Makes approximately 8 servings.
