Ingredients

    1 med. onion (diced)
    1 med. head cabbage (chopped to 1 inch square)
    1 can tomatoes (crushed, diced, sauce-whatever you prefer)
    1 can green beans
    1 1/2 cup frozen peas and carrots
    4 stalks of celery (diced)
    oregano to taste
    basil to taste
    salt and pepper to taste

Directions

Put onion, cabbage and celery in large pot with 3 cups water. Cook until tender. Add tomatoes and greens beans, return to simmer. Simmer 3 minutes. Remove from heat and add peas and carrots.
Also good with no oregano and basil and substitute salsa for tomatoes.
Serving size 2 cups.
Makes 4 quarts of very hearty vegetable soup.

    I used this recipe as a base. I added chicken broth, garlic, white beans and ham. Also, I only used fresh veggies (onion, carrots, cabbage and celery). They were what I had on hand. Great recipe! Thanks for sharing. - 12/28/09

    Very Good
    Great lunch for a yucky, dreary day. I left our the cabbage as I didn't have any and added kale. It was still good. I'll do it again. - 1/28/13

    I can get full on very few calories. Good with salsa added for flavor. - 6/12/10
