Made this up for Supper tonight , and OMG, Soooo Good!Me and the Boyfriend have totally different tastes in food, So I usually have to whip up single portions.( hence the yields 2 servings), so for more of a crowd, double the recipe for 4, triple for 6, etc

Ingredients

Peanut Sauce:
3 tbsp light peanut butter
1/3 cup HOT water
1 tbsp Soy Sauce
2 tsp Ginger
2 tsp garlic powder
splash lime juice
splash franks red hot sauce
red pepper flakes
1 tsp sesame seeds
1tsp crushed red pepper flakes
angel hair pasta
1 meatless chicken breast ,prepared as you like(I throw it thawed on my George Forman for 5 mins ) and cut up
1/2 cup frozen carrot
1/2cup frozen broccoli
2 mushrooms, sliced
1/4 small onion, chopped
Directions
in a small fry pan, stirfry carrot, broccoli, onion and mushrooms with a little water, put to one side.
prepare angel hair as to box instructions, (I used about 1/8of a box, aprx 45gr)
in the meantime, in a bowl, combine all sauce ingredients EXCEPT the water. add the water slowly while mixing (to melt the peanut butter)
combine pasta, "chick'n", veggies and sauce. toss to coat.
