Introduction

My father immigrated from India to the US in 1968. He invented this omelet recipe to fuse his traditional american breakfasts with the taste of India. Best of all, this recipe has no added salt or fat. Even after changing our lifestyles and diets, my family can still enjoy our saturday omelet tradition as part of a heart healthy breakfast! We hope you enjoy this omelet as much as we do and bring a tase of India to your breakfast!

SALT - you and add it if you want - We chose not to because its not really needed.
Butter - You can use butter to grease the pan but if you are using non stick its not necessary.

Ingredients

    0.25 cup of fresh coriander - chopped
    0.25 cup of fresh green chillies - chopped
    0.25 cup of red onion - chopped
    0.5 tsp (equivalent of a pinch) of garam masala powder
    2 large eggs

Directions

Heat skillet at medium heat until pan is hot. If using a nonstick pan, no butter/oil is necessary.
Whip 2 large eggs in a bowl together with garam masala.
Pour eggs onto skillet, add chopped onion, chopped coriander and chopped green chillies. As the bottom of the omelet becomes golden brown, flip it over and allow the other side to cook.

Garnish with extra coriander if desired!
Makes one 2-egg omelet
