Number of Servings: 6

Ingredients

    1/2 cup of chopped scallions (small green onions)
    1 cup dlced celery
    1 tbsp canola oil
    1 cup frozen peas
    1 cup fresh mushrooms
    1/2 cup grated carrots
    2 cups cooked chicken
    6 cups cooked and cold white rice (may use brown rice)
    6 tbsp La Choy soy sauce

Directions

-In a wok add canola oil, scallions and celery, saute til tender but not mushy
-add chicken, carrots, peas, mushrooms
-heat til chicken is warmed
-add cooked cold rice, stir to combine
-add soy sauce to taste, about 6 tbsp
serves 6
