Introduction

This is a lighter version of a classic American comfort casserole. This is a lighter version of a classic American comfort casserole.

Ingredients

    1 medium onion, chopped
    1, 6 oz can tuna packed in water (Do NOT drain)
    1 can 98% fat free condensed cream of mushroom or cream of chicken soup
    1 C milk
    1/2 C light mayo
    8 whole wheat butter crackers
    4 T butter, divided

Directions

Cook noodles according to package directions.

In medium skillet, melt 2 T butter. Saute onion (you could do half onion half celery if you prefer) until clear. Add tuna w/liquid, soup, milk, light mayo, salt and pepper to taste. Stir and cook over medium heat until heated through. When noodles are cooked, drain and pour into 3 quart casserole dish. Pour tuna mixture over noodles and stir gently. Top with 8 crumbled whole wheat butter crackers, such as Ritz and 2 T melted butter.

Bake at 350 degrees for 30 minutes.

To lighten this up, use panko to top the casserole and eliminate the butter topping.
