Introduction

Ingredients

    Chicken Breast, no skin, 24 ounces
    onion, chopped 1
    Carrots, raw, 1.5 cup, strips or slices
    Water chestnuts 0.5 cup slices
    Curry powder, 3 tbsp (adjust to taste)
    Corn Starch 2 tbsp
    Chicken Broth or Bouillon, 1 cup (8 fl oz)

Directions

Slice or dice chicken into bite size pieces. Spray wok or large saute pan with cooking spray. Stir fry chicken until it is white (no pink showing). Add chopped veggies (onion, carrots, water chestnuts) and cook another 4 minutes. Meanwhile, mix curry powder and corn starch with chicken broth until smooth. Add to pan and stir. Continue cooking another 2-3 minutes or until chicken is done and sauce is thickened. I sometimes add garlic and red pepper for extra kick. Makes 5 servings.
