Ingredients

6 medium Fresh tomatoes ( or one 796ml can diced)
4 Tablespoon Olive oil
4 cloves garlic minced
salt and pepper to taste
zest and juice of 2 lemons
6 Tablespoons of pine nuts (toast lightly first to release flavor)
200 g spaghetti (uncooked)
100 g feta
1/4 cup chopped fresh basil
Directions
Sautee tomatoes over medium heat in olive oil in a large pan (the pasta will be added to this same pan after cooking). After tomatoes have softened somewhat and released some juices, add garlic and cook two more minutes. Add lemon zest, lemon juice, and pine nuts (best to toast lightly first to release flavor) and reduce over low heat.
While the sauce is reducing:
Cook spaghetti in a separate pan of boiling water . Also cut feta into bite-sized cubes and fresh basil into ribbons.
After spaghetti is cooked, drain and add spaghetti to sauce pan. Top with feta and basil and toss until mixed.
Makes 4 servings.
Cooked shrimp or chicken breast can be added if desired. Also nice to reserve some basil ribbons to use as garnish.
