    3 flour tortilla
    8 oz 93% lean ground turkey
    1/3 cup black beans rinsed and drained
    1 cup reduced fat cheddar cheese
    1/2 cup salsa
    1 onion chopped
    1 packet taco seasoning


Preheat oven to 425. Spray muffin pan with cooking spray. Brown turkey in frying pan and add taco seasoning and water. Cook until thickened. Cut tortillas into quarters. Press 1 tortilla quarter into each muffin cup. Fill each tortilla filled cup with turkey, black beans, onions and salsa as desired. Top with the shredded cheese. Spray each filled cup with cooking spray to help crisp up the tortilla corners. Bake at 425 5-10 mts until cheese is bubbly and tortillas are slightly brown. You can experiment with adding jalapenos, green peppers and tomatoes without adding much calories.
