Ingredients

48oz (4 pkg, or 10C chopped) fresh cranberries
4C water
3C sugar (I use raw)
1/4C maple syrup
2 tangelos
4t ground cinammon
2t ground cardamom
Directions
1. Pour water into 7Q+ pot. Add sugar, syrup and spices. Peel and trim tangelo slices and add as well.
2. Cover and bring to a boil. Stir to make sure it doesn't caramelize and burn at the bottom of the pot.
3. While it's heating, rinse the cranberries and take out stems and such. Don't worry about 'soft' fruit -- they're just fine.
4. When the pot's aboil, add the cranberries. Keep the heat up, and stir the cranberries while it returns to a boil, getting them all good and wet.
5. Once it comes to a boil, reduce heat to a simmer. continue stirring until the berries start splitting.
6. Cover mostly -- it might boil over and make a MESS. Stir every 2-3 minutes.
7. After 10 minutes remove from heat and let it sit.
