Great way to use up those thanksgiving leftovers!

I have also used mashed sweet potatoes. Start with step #2 and add the sweet potatoes with the turkey at the end. Turns out more like a "cake".

Ingredients

    2 tsp Olive Oil
    8 oz Sweet potato, peeled & chopped
    .25 cup Red Bell Pepper, finely chopped
    2 ea Scallions, thinly sliced
    2 Tbsp Water
    1/4 tsp Salt
    1/8 tsp Pepper
    1/8 tsp Dried Thyme
    8 oz Turkey breast meat, cubed
    2 tbsp Sour Cream

Directions

1. In a large skillet, heat oil over medium heat. Add sweet potato and cook, stirring occasionally, until lightly browned and beginning to soften, about 5 minutes.
2. Add bell pepper and next 5 ingredients. Cook until bell pepper and scallions are softened, about 5 minutes.
3. Stir in turkey and cook until heated through, about 2 minutes. Remove from heat and stir in sour cream. Serve warm.
