Number of Servings: 6

Ingredients

    2 c Chopped roasted turkey
    1/4 orange or yellow Bell Pepper
    1 small Cucumber
    1 small chopped Yellow Onion
    1/4 c chopped Scallions
    1/4 c Raw Pecans
    1/4 c Olive oil
    2 tbsp Balsamic Vinegar
    2 tbsp Cider Vinegar
    2 tsp Dijon Mustard
    1/2 tsp Salt
    Tsp Cracked Pepper
    Sprinkle Cayenne Pepper
    Dash of Coriander

Directions

~Chop turkey and all veggies. Any size, but medium dice works well

~Toast pecans in toaster over or dry pan for 10 minutes (toast very low if using stove top). Let cool slightly.

~Combine all ingredients in a large mixing bowl. Adjust seasonings as desired. Add cracked pepper and/or cayenne pepper for a little pleasant heat.

~Substitute (or add) any other crisp veggies--like celery--you have on hand

Serve on toast or over salad greens
