Ingredients

    1 large onion, chopped
    3 cloves garlic, chopped
    4 carrots, peeled and sliced
    2 cups red lentils (dry)
    2 cans tomatoes
    2 tbsp basil, chopped
    1 tbsp dried mixed herbs
    1 tub quark (or other fat free soft cheese)
    1 small tub fat free cottage cheese
    100g low fat mature cheddar
    Salt, pepper and nutmeg

Directions

Fry the onions and garlic in a little spray oil until soft. Add the carrots and lentils; stir in the canned tomatoes, basil, mixed herbs and 2 cups of boiling water. Season. Cook for about half an hour, until the lentils are soft - you may need to add more water.

Meanwhile, beat together the quark and cottage cheese with salt, pepper and nutmeg. Beat in enough skimmed milk to create a saucelike texture.

Layer the cheese sauce, lentil mixture and noodles in a lasagne dish, finishing with a layer of cheese sauce on top. Sprinkle over the cheese. Bake at 180 degrees C for about half an hour, until the cheese is bubbling.
