oats 8oz
water 3 1/2 cup
flour 1 lb 3oz
baking soda 1 1/4 TSP
cinnamon 1 1/4 TSP
nutmeg 1 1/4 TSP
salt 1 1/4 TSP
margarine 6oz
brown sugar 1 lb+2 oz
sugar 1 lb+2 oz
vanilla 2 1/2 TSP
egg 1 cup
plan yogurt 1/4 cup
applesauce 1/4 cup
oats 3 oz
flour 1/4 cup
brown sugar 1/4 cup packed
margarine 1/4 cup
Directions
1. place oats in a stainless steel bowl and pour hot water over them. let stand 20 minuter. do not drain.
2. combine flour, baking soda, cinnamon, nutmeg, and salt in a bowl.
3. in a separate mixing bowl, using a paddle attachment, beat the margarine and sugars for 10 minutes. Scrape down the sides of the bowl. Add the vanilla, eggs yogurt, and applesauce. Beat for 3 minutes.
4. Add the oat mixture and blend for 1 minute on low speed. Add the flour mixture and blend for 1 minute. Scrape down the sides of the bowl.
5. For topping: Combine rolled oats, flour, brown sugar, and margarine and mix until crumbs are size of small peas.
6. Lightly coat each steamtable pan with pan release spray. Pour 7 lb patter into each pan and spread evenly. Sprinkle 1 3/4 cups of topping over each pan.
7 Bake until golden brown and muffin pulls away from sides of pan 35 minutes
