Ingredients

    3 c. fresh strawberries
    .5 c. sugar
    2.5 TB cornstarch

    1 c. reduced fat bisquick
    6 TB nonfat milk

Directions

Preheat oven to 425.

Cut strawberries into halves-- quarters if they are very large. In another bowl, mix cornstarch and sugar until there are no lumps. Toss this mixture with the strawberries and mix until well moistened. Put into 8x8 pan and cook at 425 for 15 min or so until the fruit appears translucent.

Meanwhile, mix the bisquick w/ the nonfat milk in another bowl to make a stiff dough. Spread evenly over the cooked fruit *or* drop into "biscuits" on top of the dough. Cook at 425 for an addition 10 minutes or until browned on top and cooked through.

Serves 4.

    This was a great recipe. I did add some water to the strawberries, sugar, and cornstarch to give it some juice. I also had to cook it longer than the final 10 minutes. Overall this was a great recipe though. - 5/31/08
