Ingredients

    13 corn tortilla
    1 pound extra lean ground beef
    1 19 oz. can of La Victoria red enchilada sauce
    1 can a black beans, drained and rinsed
    4 oz pepper jack cheese, shredded
    4 oz cheddar cheese, shredded
    1 tbsp dried onions

Directions

Brown the beef and add the dried onion and half of a can of enchilada sauce. Let simmer while you fry the tortillas.
Heat 1/4 cup olive oil until hot, and then quickly fry each tortilla just to soften them up.
Put 2 tbsp of the meat mixture and a sprinkling of cheese in each tortilla. Roll them up and when they are all snug in your baking dish, pour the remaining meat and sauce over the top. sprinkle any remaining cheese on the top. Bake at 375 for 30 minutes. I like to top them with some homemade pica de gallo, and a tablespoon of sour cream. This recipe makes 10 servings. The sour cream and pica de gallo are not included in the calorie total. ENJOY~
