Introduction
This is something I threw together with leftover cranberries.You can use whatever spices and flavorings you chose for the pancakes and apples.

Ingredients

1 Apple, cored and sliced thin
1/4 cup whole Cranberries
1-2 tsp Cinnamon sugar mixture (or desired spices)
see above Granulated Sugar
1 TBS Margarine

1 cup pancake mix
1 cup Milk
1 tsp Vanilla Extract or other flavoring
1 Egg,
Directions
Preheat oven to 375F
In medium skillet or cast iron skillet melt butter on medium heat.
Core and slice apples thin. Arrange single layer on butter in skillet. Add Cranberries over the top of apples.
Mix pancake batter until no lumps remain. Pour over apples and cranberries in skillet and spread even.
Place in oven, bake at 375 for 15 minutes, turn down heat to 350 and bake until batter is done, about 30 minutes.
Cut into 4 pieces.
Makes 4 servings.
