Ingredients

    3 lbs boneless skinless chicken breasts
    2 tbsp canola oil
    1 tbsp caribbean jerk seasoning
    1 can black beans (rinsed and drained)
    1 can diced tomatoes
    1 can chicken broth
    4 tbsp green onions, chopped

Directions

Makes about 6 servings
Total cooking and prep time is less than 30 minutes

Preheat oven to 400

1. Pat chicken dry, brush with canola oil on both sided. Sprinkle jerk seasoning on both sides.

3. In medium skillet coated with cooking spray cook chicken over medium low heat about 6 minutes or until lightley browned, turning once. May need to do this in batches as to not overcrowd the pan. When done cooking place in large baking dish and place in oven.

4. Using the same skillet add the chicken broth stirring up the leftover seasoning from chicken. Add the beans, tomatoes, and broth to skillet. Bring to boil. Add onion and any remaining jerk seasoning cooking about 5 minutes more.

5. Pour mixture over chicken in oven and continue heating in oven until chicken is no longer pink.
