Introduction

Going vegetarian has its moments when you look in your fridge and haven't clue what to take with you to lunch. In a rare instance, this was what I decided on. Surprisingly it tasted pretty dang good! Going vegetarian has its moments when you look in your fridge and haven't clue what to take with you to lunch. In a rare instance, this was what I decided on. Surprisingly it tasted pretty dang good!

Ingredients

    1 multigrain mission medium sized tortilla
    1/4 cup butternut squash cubed in 1/4 inch cubes ( I found mine at walmart in the produce section "marketside" already peeled cubed)
    1/3 cup black beans
    1 slice mozzarella cheese
    dash of salt

Directions

Steam the butternut squash until cooked throughly in a glass dish in the microwave. Add the black beans and microwave for another minute. Add a dash of salt and stir. Set aside. Next place the slice of cheese on the tortilla and microwave until the cheese is somewhat melted and the tortilla is flexible. Add the beans and squash to the tortilla and wrap into a burrito.
Next time I would add a bit of sour cream.
