Ingredients

    60 grams (1/2 c.) whole wheat pastry flour
    1 Tbs. unsweetened cocoa powder
    30 grams pumpkin puree
    1/2 tsp Ener-G egg replacer
    1/8 tsp salt
    1 serving (17 grams) chocolate Jarrow Rice Protein powder
    1/3 cup unsweetened vanilla Almond Breeze
    6-8 drops Stevia (or 1 tbs granulated sweetener)
    1 tsp. vanilla extract (optional)
    1/2 tsp. chocolate extract (optional)
    dash cinnamon (optional)

Directions

Mix the dry ingredients (flour, cocoa, protein powder, egg replacer, salt, cinnamon), then turn on the heat on your pancake pan.

Now add the milk, pumpkin, Stevia and extracts, if using. Mix. Allow to rest about 10 minutes while your skillet heats up.

Drop batter by heaping spoonful onto the skillet and cook until bubbles form around the edges; flip to the other side to finish cooking.

    Perhaps a bit more liquid, the batter was very thick for a pancake and didn't cook very well Tastes yummy. - 3/3/12
