Ingredients

    1 1/2 T. olive oil
    1 t. tomato paste
    2 anchovy fillets
    1 qt. chicken broth
    1 c. Barilla cheese and spinach tortellini
    1 can cannelini beans, drained and washed
    2 c. packed, rough-chopped baby spinach
    1 can diced tomato
    2 hot Italian sausages, chopped up
    1 clove chopped garlic
    1 chopped shallot
    2/3 c. roasted red pepper
    grated Italian cheese (parmesan, romano, or asiago)

Directions

Heat olive oil, add anchovy, tomato paste, shallot, garlic. Saute for 2 minutes. Add sausage and broth, and bring to a boil. Add tortellini and boil for 10 minutes to cook the pasta. Reduce heat to medium, add diced tomatoes, cannelini beans, roasted red pepper, and spinach. Simmer for 5 minutes. Serve with grated Italian cheese.
