Ingredients

    1 Tbsp Olive Oil
    1 medium onion, chopped
    1 garlic clove, minced
    8 oz uncooked elbow macaroni
    28 oz can stewed or diced tomatoes
    19 oz can kidney beans, undrained
    19 oz can black beans, undrained
    12 oz can chicken broth
    1 tsp oregano
    1 tsp parsley
    dash red pepper

Directions

Makes approx 8 1cup servings.

Put all ingredients in slow cooker. Mix well
Cover. Cook on Low 4-5 hours or until macaroni are tender but not mushy.

Serve with salad or crusty bread
