Ingredients

Uncle Ben's Boil-in-Bag White Rice (2 bags)
2 (10 oz) cans Chicken of the Sea skinless/boneless Pink Salmon - juices drained
1 1/2 cups frozen chopped onions and bell peppers (Publix)
1 bag shredded Monteray Jack cheese (2 cups)
2 tbsp Light Butter
Directions
Cook rice according to box instructions. While rice is cooking, combine butter, salmon, onions and peppers in skillet and cook on low-medium heat until onions and peppers are tender. Once the rice is done, layer rice, salmon mixture, and cheese in that order in a square baking dish. Layer until all ingredients have been used, finish with cheese. Cook at 350 degree for 30 minutes. Enjoy!
