Ingredients

Egg plant - 3 cups (small-medium fruit)
Zuccini - 6 cups grated (2-3 zucchinis)
Ground Turkey - 910 grams
Carrots - 3 sliced into coins
Potato - 1/2 medium
Mushrooms - 3 cups sliced
Tomato Paste - 1 can
Salt - 1/2 tsp
Oregano - 1.5 tsp
Parsley - 1/2 tbsp
Cauliflower - 2 cups chopped
Broccoli - 2 cups chopped
Onion - 1 medium
Garlic - 1.5 tsp
Olive Oil Cooking Spray (calculated into calories)
Directions
Prepping the egg plant:
Start by slicing the egg plant thinly. Sprinkle both sides of the slices with salt and let sit for at least 20 minutes, before rinsing off all of the salt.
Heat the oven to 300-350 F. Spray an oven safe dish with a little olive oil cooking spray.
Layer the ingredients in the oven dish, starting with a layer of egg plant, and ending with a layer of tomato paste. Spices may be sprinkled over intermittently. I didn't calculate cheese into the Nutritional info, but it may be sprinkled over top. Cook for 30-40 minutes, until done.
Makes 6 large and juicy servings.
