Ingredients

    1 tbsp olive oil
    1 onion, chopped
    14.5 oz can diced tomato
    small butternut squash, cubed
    4 cups low sodium vegetable broth
    1 tbsp fresh thyme
    30 oz. canned cannellini beans
    1 bunch fresh spinach

Directions

1. Heat oil in stockpot, medium-high heat.
2. add onion and cook. stir often, until soft. 5-6min.
3. add tomatoes and juices. incorporate and cook for 3 min.
4. add squash thyme, broth and bring to boil.
5. reduce heat and simmer until squash is tender. ~15 minutes.
6. add beans and spinach. cook until spinach begins to wilt and beands are heated through. 2-3 minutes.
7. Let stand for 5min.
