Introduction

Christmas favorite, cleaned up a bit Christmas favorite, cleaned up a bit
Number of Servings: 36

Ingredients

    1 cup white enriched flour
    1 cup whole wheat flour
    1 1/2 tsp baking powder
    1/4 tsp baking soda
    1/4 cup unsweetened applesauce
    1/2 cup Sucanat
    2 egg whites
    1/2 cup soy milk
    1/2 cup molasses
    1/2 cup chopped dates
    1/2 cup raisins
    1/2 cup chopped walnuts

Directions

Mix first 4 ingredients together. Work applesauce and sugar in a bowl until creamy. Add egg whites and beat until well mixed.
Stir in soy milk, molasses, and 1/3 of the flour mixture.
Mix dates, raisins and walnuts into remaining flour mixture.
Add to wet ingredients.
Line a cookie sheet with parchment paper. Spread 1/2 of mixture out onto sheet, into rectangle 12x8.
Bake in medium low oven at 325, for 10-15 minutes. Cut into diamonds.
Bake the rest of the dough the same way.
Makes 3 dozen "diamonds"
These can be iced, if you wish.
