Introduction

Ingredients

    2 stalks of celery chopped
    1/2 bell pepper chopped
    1 medium onion chopped
    1 tablespoon garlic chopped
    32 ounces fat free chicken broth
    3 tablespoons of olive oil
    1 medium head of cauliflower chopped
    salt, pepper, cumin to taste
    1 cup of soy milk

Directions

saute onion, garlic, celery and green pepper in olive oil.
Add chopped cauliflower, cumin, pepper salt and broth. Bring to a boil. Simmer until cauliflower done. Add 1 cup of soymilk. Emulsify with hand blender or put in blender. Serve hot. Makes about 6 1.5 cup servings.
