Introduction

A small batch of muffins made with 50-50 soy and white flour. Can be made with just white flour. Soy flour doesn't absorb as much liquid, so use more water if you make these with just white all-purpose flour. Ingredients

    1/4 c. soy Flour, stirred
    1/4 c. white Flour
    3 Tbsp Granulated Sugar
    4 tbsp Egg Beaters (or 1 egg)
    2 Tbsp water
    3 Tbsp Applesauce, unsweetened
    1 tbsp Poppy seed,
    1 tsp grated Lemon Peel
    1 1/2 tsp Baking Powder

Directions

Makes a half dozen with the listed ingredients. Just double for a full dozen. Serving info is per muffin.
Mix dry ingredients together. Blend wet ingredients then add all at once to dry. Mix until just blended. Bake at 375F in greased muffin tins (6-cup tin), 15-20 minutes. Cool on rack.
